Happy Wednesday!

Today, I had a rough start to my morning, but I didn’t let that stop me from having a good breakfast. I went ahead and took my breakfast to go today -which is why I’m not having snacks -eatingΒ a late breakfast usually keeps me satisfied until lunch time rolls around.

Breakfast: Egg Sandwich

Breakfast to go! I made my eggs first thing in the morning, and let them cool down whileΒ I got ready. Before heading to work, I prepped and packed my sandwich and enjoyed it at my desk at work πŸ™‚

  • 1 egg + 1 egg white, scrambled
  • Shredded spinach, Oregano or Cilantro (or all three!)
  • 1 Tablespoon mozzarella cheese
  • 2 Slices Ezekiel Bread

Lunch: Chicken Pesto

This is a filling, yet light sandwich -perfect to pack for a lunch.

  • 2 slices Ezekiel
  • 3 oz Chicken Breast,Β boiled, and shredded
  • 2 tsp Pesto sauce (toss basil, 1 tsp olive oil, almonds, and garlic in a food processor)
  • Have with a side of fruit

Snack: 1 Banana

Dinner: Chicken Salad

  • skinless, boneless chicken breast, grilled and sliced
  • Baby spinach
  • 1 tablespoonΒ olive oil
  • freshly ground black pepper
  • finely chopped celery
  • (optional) chopped walnuts
  • (optional) green onions, thinly sliced
  • Pinch of parmesan cheese to top it off

 

Water

At Β least 64oz throughout the day
